I love pizza! Always have...always will. However, my pizza of choice has changed dramatically. Just thinking about the pizzas we used to order makes me cringe. There was usually pepperoni, sausage, lot of cheese, maybe a stray veggie. Oh...the calories. Pizza has been tough for me this year because a particular adult that lives in my house (not saying names, but there is only one other adult here) often brings home pizza for himself and the boys. For a long time is was fairly torturous to me. Then I discovered
Flatouts and starting making my own pizzas. I actually prefer these to a slice from a pizza place. It's thin, crispy, fresh and healthy. This way I know exactly what I'm eating and there is no grease dripping off it. Today I used pizza sauce, turkey pepperoni, black olives, onions, crushed pineapple and reduced fat mozz cheese. It was delicious for right at 300 calories. You can put anything you want on it. Another favorite of mine is bbq sauce with chicken, onions, pineapple. It's a nice big portion and I feel like I've really had a treat! Today I bought a different kind of flatbread at BJs that may hold promise as a crust too. I'll le you know.

Hey Barb! I love to use those Flatouts as a crust too! I put mine in a baking dish, then I toss a lot of baby spinach with a little salt and pepper, chopped garlic, a little feta cheese and some olive oil and pile all that (quite high) over the bread. Then bake at 400-degrees until the spinach has all wilted down. It's a great veggie pizza. Sometimes I just roll it up.
