Waffles, Workouts and Groceries

I'm not really sure where today went. It was a fast and good day.

We started out the morning with homemade whole-grain waffles. I found the recipe on All-recipes. They had all kinds of good stuff in them. The entire family enjoyed them. Next time I'll see how they are if I eliminate the oil and use more applesauce. I didn't get any pics of them, however, here is my oldest son enjoying his. He asked for some chocolate chips in his waffle.


Tomorrow I'm making waffles with the protein pancake recipe. Can't wait.

After breakfast I hit the gym for some cardio. Another 20 min on the step machine. I love the feeling I get when I accomplish that! I did another 30 min on the treadmill. It was a good cardio session.

Then it was time for Jeff and I to trade places. I came home to hang with the kids and he went to the gym! That's 4 days in a row! I'm so proud of him. He came home totally pumped up and on an adrenaline high!

My lunch was a homemade 99% lean turkey burger with some corn & black bean salsa I mixed up. Topped with 2T of cheese on a bed of romaine. It was delish.


Normally I do the grocery shopping by myself. Today we decided to make it a family affair. We went to a local produce place and stocked up. Tomorrow we'll be testing out a pummelo for the first time. Ever heard of it? After that we hit the grocery store together. The kids are TOUGH to shop with, but we all survived. It was a great experience talking about and shopping for healthy stuff with my hubby!!

Dinner was Tilapia with stir-fry veggies. I do not eat seafood. I do not like seafood...of ANY kind! I agreed to give it my best shot tonight and see if I could eat a piece. It wasn't horrible...wasn't great, I managed 3-4 little bites. I still don't like any seafood! Give me chicken!!!

Now we are snuggled up watching football. The Eagles are scaring us! C'mon Birds!!

    Pummelos are interesting. They have a super thick skin, and are a lot like a grapefruit, only sweeter, I think.
